Fruit infused hot sauces and exotic jams, caramels, and marmelades. I’m personally partial to the hot sauces, which I frequently use in salads in place of vinegar, with truly excellent results. They’re also wonderful as a steak sauce, and I have used the pineapple, mixed with some fresh orange jam to make a chicken glaze that was memorably delicious.
