Philly’s Mom’s Green Tomato Mincemeat

It’s late in the season, but there’s still time to make this wonderful mincemeat (vegan) for your holiday celebrations! Gather your green tomatoes for this…and any late apples you may have. I guarantee that anyone who loves mincemeat will love this one.

Instructions
  1. Core apples, quarter tomatoes and put through a course grinder (or pulse in a processor) with raisins
  2. Drain well then put in a heavy-bottomed kettle with the remaining ingredients.
  3. Quick method: bring to boil and stir rapidly for 6-8 minutes
  4. Preferred: slow method: simmer on low for 2 hours.
  5. When cooked, take off heat and 4-8oz of rum, brandy or liqueur of choice to taste (optional) - process in hot water bath for 20 minutes
