It’s late in the season, but there’s still time to make this wonderful mincemeat (vegan) for your holiday celebrations! Gather your green tomatoes for this…and any late apples you may have. I guarantee that anyone who loves mincemeat will love this one.
Philly's Mom's Green Tomato Mincemeat
Vegan and delicious. Makes 6-8 litres.
Units: Metric US Imperial
Core apples, quarter tomatoes and put through a course grinder (or pulse in a processor) with raisins
Drain well then put in a heavy-bottomed kettle with the remaining ingredients.
Quick method: bring to boil and stir rapidly for 6-8 minutes
Preferred: slow method: simmer on low for 2 hours.
When cooked, take off heat and 4-8oz of rum, brandy or liqueur of choice to taste (optional) - process in hot water bath for 20 minutes
