Tortilla Soup recipe can be made a chicken tortilla soup (with chicken and chicken broth) or as a vegetarian version (eliminate chicken and replace with veggie broth). It can also be made vegan with the elimination of the sprinkle of cheese at serving.
Ingredients
- 2 Chicken Breastschopped
- 8cups Chicken Broth(or vegetable broth)
- 1medium Zucchinichopped
- 119 oz can Black Beansdrained and rinsed
- 1.5cups Cornfrozen or tinned
- 1tbsp cumin powder
- 2cloves Garliccrushed
- 1/2cup Salsachunky (mild to hot, to taste)
- Tortilla Chips
- Cheesegrated
- Limewedges, as garnish
- Fresh Cilantro Leaves(optional)
- Fresh Green Onionchopped

Instructions
- Add chopped chicken and broth to a large saucepan. Bring to boil and reduce to medium heat.
- Add zucchini, black beans, corn, garlic, and cumin. Let simmer for 20 minutes. Add salsa and stir. Cover and reduce to low until serving.
- At serving, top bowl of soup with tortilla chips and grated cheese (optional). Serve with a wedge of lime.
- Suggested condiments for optional dressing of soup include: hot sauce, green onions and cilantro leaves.
