I was trained in what some people refer to as the third wave of specialty coffee. The specialty coffee industry would like people to view coffee as an artisanal craft—not just a commodity and a caffeine delivery system.
The objective of this column is not to ignite or fuel the third wave versus traditional debate, but to bring people together and discover the merits of each one. Instead of clinging onto one end of the spectrum, I’d rather treat each style as a different product and explore the merits in both.
